Sweet: Pecan-Spice Bread

2 cups POST SELECTS GREAT GRAINS Crunchy Pecans Whole Grain Cereal
1-1/2 cups milk
1/2 cup (1 stick) butter or margarine, melted
1 egg
3/4 cup firmly packed brown sugar
2 cups flour
1/2 cup PLANTERS Pecan Pieces
1 Tbsp. CALUMET Baking Powder
1/2 tsp. ground nutmeg
Recipe
PREHEAT oven to 350°F. Mix cereal, milk and butter in medium bowl; let stand 5 minutes. Add egg and sugar; mix well. Stir in flour, pecans, baking powder and nutmeg just until blended.
SPREAD into 8x4-inch loaf pan sprayed with cooking spray.
BAKE 55 minutes to 1 hour or until toothpick inserted in center comes out clean. Cool 10 minutes in pan on wire rack; remove from pan. Cool completely. Cut into 16 slices to serve.

Pecan-Spice Muffins
Prepare batter as directed; spoon evenly into 12 medium muffin cups sprayed with cooking spray. Bake at 350°F for 20 to 25 minutes or until golden brown. Makes 12 servings, 1 muffin each.
Storage Know-How
This bread tastes great even the day after it's been baked! Be sure to cool it completely, then wrap it tightly in plastic wrap. Store overnight at room temperature and you've got a fresh, tasty treat the next morning!
