    Sweet: Pumkin Bread w/Orange Cream Cheese

    List of Ingredients

    3 cups sugar
    1 cup oil
    4 eggs
    Rind of one lemon, grated
    2 1/2 cups pumpkin
    3 1/2 cups flour
    1/2 tsp salt
    2 tsp soda
    1 tsp nutmeg
    1 tsp cinnamon
    1/2 tsp allspice
    1 tsp cloves, ground
    1 1/2 cups chopped walnuts

    Recipe


    Mix the sugar and oil well. Beat in eggs one at a time. Add lemon rind and pumpkin. Sift the dry ingredients together; stir in nuts so they are well coated. Gradually add the dry ingredients to the pumpkin mixture, blending thoroughly. Pour the batter into 2 well greased loaf pans (8.5 x 4.5 x 2 3/4). Bake at 350°F about 1 hour and 10 minutes. A cake tester inserted in the center should come out clean. Place loaves on a cake rack to cool for 10 minutes before removing from pans.


    Orange Cream Cheese---

    8 ounces cream cheese
    1/4 cup orange juice
    1/2 tsp orange zest


    Mix together and serve alongside the sliced pumpkin bread. Delicious!
