Yeast: Cinnamon Swirl Bread

1 pkg. active dry yeast
1/4 cup warm water
2 cups milk, scalded
1/3 cup sugar
2 tsp. salt
1/4 cup shortening
6 cups flour
Cinnamon Mixture:
1/2 cup sugar
1 tbsp. cinnamon
3 tsp. water
Recipe
Dissolve yeast in warm water. Combine milk, sugar, salt and shortening. Cool to lukewarm. Stir in 2 cups flour. Beat well. Add the yeast mixture. Add enough of the remaining flour to make a moderately stiff dough. Knead about 9 minutes. (I did mine 5 minutes and it is fine.) Shape into a ball. Place in a lightly greased bowl. Cover and let rise in warm place 1 hour, 15 minutes. Punch down. Divide dough into two even pieces and roll dough into two 15” X 7” rectangles. Put 1/2 cinnamon mixture on each piece and sprinkle with 1 1/2 teaspoon water and roll into a loaf.
Note: I did one like that and the other one I put the water on the dough first, and it works a lot better.
Put in two 9” X 5” X 3” bread pans. Cover and let rise for about 45-50 minutes, or until double. Bake in 350° oven for 30 minutes.
