    Yeast: Italian Walnut Bread

    List of Ingredients




    Water, lukewarm 4lb.
    Dissolve yeast and potato flakes in the water
    Yeast 4 oz
    Potato flakes 3 oz

    Bread flour 6lb.

    Add. Mix until the dough is fully incorporated.

    Sugar 3oz
    Salt 1
    Non-fat milk powder 2oz
    Vital wheat gluten 2oz
    Canola Oil 4 oz
    Walnuts, pieces 1 lb
    Oregano, dried 1/4 oz
    Parsley, freshly chopped 2/3 oz

    Total appr. wt. 12lbs. 4oz

    Let the dough rest until doubled in size and punch down. Repeat this step. Scale the dough to the
    desired size, and shape. Bake in a 400°F oven for about 35 minutes.
