I'm not sure where this recipe came from but I think that it may have been Mrs. Latham's. Ted's family owned a restaurant, "Latham's" in Brewster for many years. His mother did most of the cooking there. I think she passed this recipe on to Ma.
List of Ingredients
1/12 cup zucchini, coarsely grated
1/2 cup carrots, coarsley grated
1 1/2 cup sugar
3 eggs
1 cup vegetable oil
3 cup flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
2 tsp. vanilla
1 cup raisins
1/2 cup walnuts, coarsley chopped
Recipe
Grease and flour 2 9"x5" loaf pans.
Preheat oven to 350 degrees.
Coarsley grate zucchini and carrots.
Beat together eggs, sugar and oil.
Sift together flour, baking soda, baking powder and salt.
Add dry ingreadients to wet ingredients.
Add zuchinni, carrots, nuts and vanilla. Mix well.
Bake for 1 hour at 350 degrees.
YIELD: 2 loaves
