Casserole: Breakfast Mess

List of Ingredients
5 diced cooked potatoes
2 bell peppers, sliced in strips (1 red and 1 green)
1 large onion, cut in strips
1 tablespoon season salt
1 lb Jimmy Dean sausage
8 beaten eggs
2 cups grated sharp cheddar cheese
Recipe
In a large cast iron pan, cook sausage untill brown, drain fat, add the onion, bell pepper strips, potatoes and season salt, cook approx 10 minutes, add eggs and cook untill set, sprinkle cheese on top and put under broiler until cheese is melted and slightly browned.
YIELD: 6-8 Servings
