Quiche: California Cafe Quiche

List of Ingredients
4 cups shredded potatoes, or hash browns
12 eggs beaten
3 cups heavy cream
1 bunch asparagus diced
1 pound cooked lobster meat, chopped
4 cup sliced mushrooms
1 cup shredded parmesan
2 ounce olive oil
1 Tbls salt
1/2 tsp black pepper
1/2 tsp nutmeg
Recipe
Spray a 10" x 12" baking pan with non-stick spray. Pack the shredded potatoes in the bottom of the pan and bake at 300 degrees til golden brown.
In a bowl mix the egg, cream, salt, pepper, and nutmeg.
In a saute pan heat the oil and saute the mushrooms, and asparagus till soft, then add them to the baking pan.
Place the lobster and parmesan on top of the mushrooms and asparagus and pour the egg mixture over the other ingredients.
Bake at 300 degrees for approx. 1 hour and 30 minutes or until a tooth pick can be inserted and comes out clean, let cool 20 minutes. Then cut into 12 pieces.
