    Casserole: Ham & Cheese Soufflé

    Liberty Hill Inn on Cape Cod, Yarmouth Port, MA
    * Use Two 2-quart casseroles, greased
    * 1 loaf cubed Italian bread
    * 1 pound sliced cooked ham, cubed
    * 12 ounces shredded cheddar cheese

    Blend well:

    * 6 tablespoons flour
    * 5 tablespoons melted butter
    * 2 tablespoons dry mustard
    * 8 eggs
    * 4 1/2 cups milk (1/2 evaporated, 1/2 water)

    Pour mixture over ham & cheese and bread.

    Chill covered overnight.

    Bake uncovered at 350 degrees for 1 1/4 hours.

    Serve immediately.
