Potato: Country Fried Potatoes

2 medium potatoes, sliced thin
1 small onion, chopped
3 teaspoons bacon fat
salt & pepper
Recipe
Heat bacon fat over high heat.
Add potatoes and fry, turning occasionally, until they begin to brown.
Add onion and fry for about 1 minute.
Add salt & pepper; toss to distribute.
add about 3 T water, immediately cover, reduce heat, and simmer until potatoes are tender (about 3 to 5 minutes).
