List of Ingredients
1-1/2 cups toasted hazelnuts
2 cups all-purpose flour
1/4 cup sugar
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
2 cups buttermilk
3 large eggs
1/3 cup salad oil
1 cup creme fraiche or sour cream
5 to 6 cups mixed berries (raspberry, blueberry, Tay, Logan, or Marion)
.
Berry syrup
Recipe
Whirl nuts in a food processor (or part at a time in a blender), until very finely ground (if overprocessed, nuts will turn to butter). If using blender, transfer nuts to a large bowl.
To nuts add flour, sugar, baking powder, soda and salt; whirl or stir to blend. Add buttermilk, eggs and oil; whirl or whisk just until evenly moistened.
Bake batter in an oiled regular or Belgian waffle iron according to manufacturer's directions until well browned. Serve as cooked, or keep warm directly on rack of a 200-degree oven while making remaining waffles.
Place waffles on plates and spoon creme fraiche and berries on top. Offer with berry syrup.
Makes 6 servings.
