Omelets: Garden Fresh Breakfast

List of Ingredients
8 oz Mushrooms; sliced
1 c Chopped zucchini
1/2 c Chopped green pepper
1/4 c Sliced green onions
2 tb Butter
1 md Tomato; diced & seeded
4 Eggs
2 tb Water
2 tb Dijon mustard
1/2 ts Salt
1/4 ts Pepper
1 c (4oz) shredded Monterey Jack cheese

Recipe
1. Fry mushrooms, zucchini, pepper and onions in
butter until tender, about 5 minutes. Drain off
liquid; add tomato.
2. Mix eggs, water, mustard, salt and pepper. Pour
over vegetables in skillet; cover and cook 5 to 10
minutes, or until eggs are set. Sprinkle with
cheese and paprika. Cut into wedges to serve.
YIELD: 4-6 Servings
