Omelets: Plant City Strawberry Omelet

2 eggs
1 1/4 teaspoons powdered sugar, divided
1 drop vanilla extract
1 teaspoon margarine
2 tablespoons sour cream
Sliced fresh strawberries
Pinch of grated lemon or orange peel
Powdered sugar for garnish
Recipe
In small bowl of electric mixer, beat eggs until very light and fluffy. Stir in 1 teaspoon powdered sugar and vanilla extract.
In omelet pan or small skillet, melt margarine over medium-low heat. Pour egg mixture in pan; cover. Cook about 4 minutes (top will be a little soft).
Combine sour cream, 1/4 teaspoon powdered sugar and grated peel. Spread sour cream filling on omelet; remove to plate; fold in half. Add strawberries; sprinkle with powdered sugar.
