Pancakes: Apple Crisp Pancakes

Recipe Introduction
"These pancakes have the flavor of an apple crisp, with cooked apple and cinnamon in the oat-and-brown sugar batter."
List of Ingredients
1 medium (red delicious) apple: peeled, cored and diced
3 tbsp apple juice
Dash cinnamon
1/2 cup old-fashioned rolled oats
1 cup all-purpose flour
1/2 cup brown sugar
2 tsp baking powder
1/4 tsp baking soda
1 tsp ground cinnamon
1 egg
1 cup milk
Honey or Maple Syrup
Recipe
In small saucepan on medium-low heat, combine apple juice, apple and dash of cinnamon. Bring just to a boil; reduce heat. Cover and simmer 8-10 minutes until apple is soft, then remove from heat. Do not drain.
In large mixing bowl, combine next 6 ingredients.
In a medium bowl, combine egg and milk; add to dry ingredients, then mix just until there are no lumps.
Fold in undrained apple mixture.
In a large skillet over medium heat, pour 1/4 cup batter. Let cook about 3 minutes or until air bubbles form on top of pancake.
Flip and cook another 2-3 minutes. Repeat with remaining batter.
Serve with honey or maple syrup.
