Quiche: Bacon and Egg Quiche II

1/2 cup coarsely grated Swiss cheese 125 mL
1 9" (25 cm) baked pie shell 1
4 eggs 4
5 strips, crisp, crumbled bacon 5
1-1/2 tbsp finely chopped green onion 20 mL
1-1/2 cups Nordica Cottage Cheese 375 mL
1/2 cup table cream 125 mL
1-1/2 tsp salt 7 mL
dash pepper dash
sliced red pepper
sliced tomato
parsley
Recipe
Preheat oven to 350ºF (180ºC). Sprinkle grated cheese over bottom of baked pastry shell. Combine green onions and crumbled bacon with cottage cheese. Add eggs and beat until mixture is smooth. Add cream, salt and pepper; blend. Pour into pastry shell. Bake at 350ºF (180ºC), 40 to 45 minutes or until a knife inserted in centre of pie comes out clean. Cool slightly before serving. Garnish with sliced tomatoes, sliced red pepper and parsley.
Serves: 6. Preparation time: 20 minutes. Baking time: 40 - 45 minutes.
