    Quiche: Spinach & Bacon Quiche

    10-oz. pkg. frozen chopped spinach, thawed
    4 eggs, beaten
    1-1/2 c. half-and-half
    1.8-oz. pkg. leek soup mix
    1/4 tsp. pepper
    10 slices bacon, crisply cooked and crumbled
    1/2 c. shredded mozzarella cheese
    1/2 c. shredded sharp Cheddar cheese
    9-inch frozen pie crust, unbaked

    Recipe



    Drain spinach between layers of paper towels; set aside.

    Whisk eggs, half-and-half, soup mix and pepper together in a medium bowl; stir in spinach, bacon and cheeses.

    Pour into frozen pie crust; place on a baking sheet.

    Bake at 375 degrees for 40 to 45 minutes.

    Makes 8 servings.
