Waffles: Yeast Raised Waffles

List of Ingredients
1/2 cup warm water
1 pkg dry yeast
2 cups milk, warmed
1/2 cup butter, melted
1 tsp. salt
1 Tbsp. sugar
2 cups flour
2 eggs
1/4 tsp. baking soda
Recipe
Put the water into a large mixing bowl and sprinkle yeast over the top. Let stand 5 minutes to proof. Add the milk, butter, salt, sugar and flour to the yeast mixture and beat until smooth. Cover the bowl with plastic wrap and let stand overnight at room temperature.
Just before baking waffles, beat in the eggs and baking soda, mixing well. Bake in a hot waffle iron until golden brown and crisp. Serve warm with butter and maple syrup.
