    Squares: Ann's Lemon Coconut Squares*

    List of Ingredients


    • 1 1/2 cups all-purpose flour
    • 1/2 cup confectioner's sugar
    • 3/4 cup cold butter
    • 4 eggs
    • 1 1/2 cups sugar
    • 1/2 cup lemon juice ( I use RealLemon)
    • 1 tsp. baking powder
    • 3/4 cup flaked coconut


    Instructions


    1. In a bowl, combine flour and confectioner's sugar; cut in butter until crumbly. Press into the bottom of a lightly greased 13-inch x 9-inch x 2-inch baking pan.

    2. Bake at 350 degrees for 15 minutes.

    3. Meanwhile, in a mixing bowl, beat the eggs, sugar, lemon juice and baking powder until well mixed.

    4. Pour over crust. Sprinkle coconut evenly over the top.

    5. Bake at 350 degrees for 20-25 minutes or until golden brown. Cool on a wire rack. Cut into bars.

    6. YIELD: 4 Dozen
