Bars: Caramel Peanut Bars

2 cups all-purpose flour
1 1/2 cups confectioners’ sugar, divided
3/4 cup (1 1/2 sticks) plus 2 tablespoons cold butter or margarine, divided
1 teaspoon vanilla extract
1/2 (14-ounce) package caramels, unwrapped (about 22 caramels)
1 (14-ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
1 cup chopped peanuts
Chocolate Glaze (recipe follows)
Recipe
Preheat oven to 350°F. In large bowl, combine flour, 3/4 cup confectioners’ sugar, 3/4 cup butter and vanilla; blend until crumbly. Press on bottom of 13x9-inch baking pan. Bake 15 minutes or until lightly brown.
In medium saucepan, over low heat, cook and stir caramels, EAGLE BRAND® and remaining 2 tablespoons butter. Once caramels are melted, stir in 1/2 cup confectioners’ sugar and peanuts. Spread over crust.
--- Chocolate Glaze---
In small saucepan, over low heat, melt 2 (1-ounce) squares semi-sweet chocolate with 2 tablespoons butter or margarine; stir until smooth. Remove from heat; stir in 1/2 teaspoon vanilla. Immediately drizzle glaze over bars. Cool. Cut into bars. Store leftovers covered in refrigerator.
