    Bars: Chewy Chocolate Mango Bars

    3/4 cup butter, softened
    1 3/4 cups sugar
    1 tsp. vanilla
    2 eggs 1 cup flour
    1 tsp. salt
    1 cup cashews, chopped
    1 1/2 cups Mariani Mango, chopped (dried fruit)

    Chocolate Topping
    1 cup chocolate chips
    1/4 to 1/2 cup sugar, according to taste
    1 cup mini marshmallows
    1/4 cup boiling water
    1-2 tablespoons boiling water

    Recipe



    Preheat oven to 350°F.

    Grease a 9 x 9 pan with cooking oil. At high speed, cream the butter and sugar until light. Add vanilla and mix some more. Add eggs one at a time, mixing well after each addition. Fold in the dry ingredients mixing only until combined. Spread the mixture into the prepared pan. Bake for about 45 minutes. When cool, spread with Chocolate Topping.

    For topping, boil water, then lower heat to medium high. Add chocolate chips and sugar, mixing until dissolved, stirring often. Turn off heat. Add mini marshmallows and a tsp. of boiling water. Mix well with wooden spoon until marshmallows are completely melted. Add boiling water to the mixture while mixing until smooth, honey-like consistency is reached. Spread over bars and store at room temperature until topping has settled.

    Makes 24 bars.
