Bars: Chewy Fruitcake Bars

2 cups buttermilk baking mix *
2 Tbsp sugar
1/4 cup firm margarine or butter
1 cup flaked coconut
2 cups cut-up mixed candied fruit
1 cup chopped dates (if desired)
1 cup chopped nuts
1 can (14 oz) sweetened condensed milk
Recipe
* Note: I've found the buttermilk baking mix in the dry milk section of the grocery store.
Heat oven to 350°
Mix baking mix and sugar; cut in margarine thoroughly.
Press in ungreased jelly roll pan with floured hands.
Bake 10 minutes.
Remove from oven and sprinkle coconut over baked layer.
Layer candied fruit and dates over coconut.
Sprinkle with nuts.
Drizzle milk over top.
Bake until light golden brown, 22-30 minutes.
Cool.
Cut into bars 2x1 inch.
YIELD: 5 Dozen
