    Bars: Cranberry-Pecan Bars

    List of Ingredients




    For the crust:
    1 cup flour
    2 tablespoons sugar
    1/3 cup margarine or butter
    1/3 cup chopped pecans

    For the topping:
    1 1/4 cups sugar
    2 tablespoons flour
    2 beaten eggs
    2 tablespoons milk
    1 1/4 cups cranberry-orange relish
    1/2 cup coconut
    1/2 cup chopped pecans

    For crust, in a medium mixing bowl combine 1 cup flour and 2 tablespoons sugar. Using pastry blender, cut in margarine or butter until mixture resembles coarse crumbs. Stir in 1/3 cup of pecans. Press flour mixture into the bottom of a greased 9-by-13-inch baking pan. Bake in a 350 degree oven for 15 minutes. Meanwhile, in a large mixing bowl combine 1 1/4 cups sugar and 2 tablespoons flour. Stir in eggs, milk, cranberry mixture, coconut and pecans. Spread over partially baked crust. Bake in 350-degree oven for 25-30 minutes more or until top is lightly browned. Cool in pan on wire rack. While still warm, cut into bars. Cool completely.
    YIELD: 36 Bars

    These freeze well.
