Bars: Double Strawberry Bars

3/4 cup boiling water
1 pkg. (4-serving size) JELL-O Brand Strawberry Flavor Gelatin
3/4 cup cold water
16 Strawberry NEWTONS Fruit Chewy Cookies
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, 1/3 Less Fat than Cream Cheese, softened
1 cup thawed COOL WHIP or COOL WHIP LITE Whipped Topping
Recipe
STIR boiling water into gelatin in medium bowl until dissolved. Add cold water; stir. Refrigerate 1-1/2 hours or until slightly thickened.
PLACE cookies in bottom of 8-inch sqaure baking pan. Beat Neufchatel cheese in medium bowl with electric mixer on medium speed until creamy. Gently stir in whipped topping; spread over cookies. Top with thickened gelatin.
REFRIGERATE at least 2 hours or until firm. Cut into 16 bars to serve. Store leftover bars in refrigerator.
