Bars:
6 oz. frozen orange juice concentrate
1/2 C. rolled oats
1/2 C. raisins or mixed candied fruit
1/2 C. chopped walnuts
1/2 C. shortening
1/2 C. sugar
1/2 C. molasses
1 egg
2 C. sifted all-purpose flour
1/4 tsp. salt
1 tsp. baking soda
1 tsp. ginger
1 tsp. cinnamon
Icing:
2 1/2 T. orange juice
1 1/2 C. sifted confectioners' sugar
Recipe
Preheat oven to 325¼F.
Combine orange juice concentrate, oats, fruit and nuts; set aside. Cream together shortening and sugar; beat in molasses and egg. Set aside.
Sift together flour, salt, soda and spices. Stir into molasses mixture. Add fruit mixture. Blend well.
Spread evenly into a greased 13 x 9-inch baking pan.
Bake for 40 minutes. Cool on rack.
Icing: Frost with icing made by beating orange juice gradually into confectioners' sugar.
