    Bars: Ginger Cashew Blondies

    6 tablespoons light olive oil
    1/2 cup packed dark brown sugar, raw sugar, or Succanat
    1/2 cup honey
    1 large egg
    1 teaspoon vanilla extract
    1 cup whole-wheat flour
    1/2 teaspoon baking powder
    1/4 teaspoon salt
    1 tablespoon ground ginger
    3/4 cup broken or coarsly chopped cashews

    Preheat oven to 350 degrees. Grease an 8" square pan and line bottom with waxed paper. Beat oil, sugar, honey, egg, and vanilla at high speed for 1 minute, or until smooth. In another bowl, combine flour, baking powder, salt, and ginger. Gradually add to liquid ingredients, blending at low speed until just moistened. Stir in nuts. Spread batter evenly in the pan and bake for 25 to 30 minutes, or until top is dry. Let cool in pan. Invert and cut into bars.
