    CRUST:

    1 cup all-purpose flour
    1/3 bup butter, softened
    1/4 cup confectioner's sugar

    TOPPING:

    1 cup sugar
    2 eggs
    2 tablespoons all purpose flour
    1/2 tsp lemon extract
    1/2 tsp baking powder
    1/4 tsp salt
    Confectioner's sugar

    Recipe



    Combine the crust ingredients and pat into an 8-inch square baking pan. Bake at 375 degrees F. for 15 minutes.

    Meanwhile, for the topping, combine the sugar, aggs. flou, lemon juice, extract, baking powder and salt in a mixing bowl. Mix until frothy;pour over crust.

    Bake at 375 degress F. for 18022 minutes or until light golden brown.

    Dust with confectioner's sugar. After cooled, cut into squares.

    YIELD: 9 Bars
