    Bars: Spicy Pumpkin Bars

    BARS
    1 cup flour
    1 cup whole wheat flour
    1 1/2 cups brown sugar, packed
    2 teaspoons baking powder
    1 teaspoon baking soda
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/2 teaspoon cloves
    1/4 teaspoon salt
    1/2 cup oil
    1/2 cup apple juice
    16 ounces pumpkin, canned
    2 eggs

    FROSTING
    3 ounces cream cheese -- softened
    2 Tablespoons butter -- softened
    1/2 teaspoon vanilla
    2 cups powdered sugar
    1 tablespoon milk (up to 2 tablespoons)

    Recipe

    Heat oven to 350. Grease and flour 15 x 10 x 1" baking pan. Lightly spoon flour into measuring cup; level off. In large bowl, combine all bar ingredients; beat at low speed until moistened. Beat 2 minutes at medium speed. Spread in greased and floured pan.

    Bake at 350 for 20-30 minutes or luntil toothpick inserted in center comes out clean. Cool 1 hour or until completely cooled. In small bowl, combine cream cheese and butter; blend well. Stir in vanilla. Add powdered sugar and enough milk for desired spreading consistency; beat until smooth.

    Frost cooled bars.( Cream Cheese Frosting) If desired, sprinkle with nutmeg.

    Refrigerate 30 minutes or until set. Cut into bars. Store in refrigerator.


    NOTE: Do not use pumpkin pie mix which contains sugar and spices; just solid pack pumpkin.

    YIELD: 48 Bars
