Brownies: Kathryn's Grandmother's Brownies
Source of Recipe
Kathryn Tinckam
8 squares Baker's unsweetened chocolate
1 1/2 cups butter or margarine
Melt together unsweetened chocolate and butter or margarine over hot water (not boiling) or in microwave at medium for 4 minutes.
6 eggs, beat until lemon coloured
3 cups sugar
Add to eggs, beating until thick (about 3 minutes). Stir in chocolate mixture
1 1/2 cups all purpose flour
1 tbsp vanilla
1 cup walnuts (optional)
Fold all these into the mixture. Pour into 2 greased and floured 8-inch square pans. Bake at 350 degrees Fahrenheit (180 degrees Celcius) for 35-40 minutes (they will be moist in the centre when done). Recipe halves well (but I don't recommend it just because you'll probably run out!).
OPTIONS:
---Glaze: Melt 1 square Baker's chocolate with 1 tsp butter and 1/4 cup milk. Blend until smooth and add 1 1/4 cups icing sugar. Spread over cooled brownies.
---Rocky Road: Sprinkle 2 cups mini-marshmallows over 1 pan brownies, broil under pre-heated broiler until golden. Drizzle with melted chocolate or sprinkle with chocolate chips and nuts before baking (leave out the chocolate chips in the recipe in this case).
