Bars: Chocolate-Mincemeat Cheesecake Bars

- 1 12oz. package semisweet chocolate chips
- 1/2 cup butter (1 stick)
- 1 cup chopped nuts
- 2 cups graham cracker crumbs
- 1 8 oz. package cream cheese, softened
- 1 14 oz. can sweetened condensed milk
- 1 egg
- 1 tsp. vanilla
- 1 9 oz. package condensed mincemeat, crumbled
Instructions
- Preheat oven to 350 degrees. In a large saucepan, over low heat, melt chocolate chips and butter. Stir in crumbs and nuts. Press half the mixture in firmly into the bottom of a greased 15"x10" jelly roll pan (layer will be thin.)
- In a large bowl, beat cream cheese until fluffy. Beat in the sweetened condensed milk, egg and vanilla.
- Add mincemeat. Mix well. Pour into prepared pan. Top with remaining crumb mixture.
- Bake at 350 degrees for 25-30 minutes or until wooden pick inserted in center comes out clean. Cool to room temperature. Chill before cutting into bars. Refrigerate the leftovers.
