Brownies: Zucchini Nut Brownies

1/4 cup Butter
2 ounces Unsweetened chocolate
2 Eggs
1 cup Sugar
1/4 teaspoon Salt
1/2 teaspoon Vanilla
3/4 cup Flour
1/2 teaspoon Allspice
1/2 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1/4 teaspoon Ginger
1/2 cup Zucchini; grated finely -- squeezed dry
1/2 cup Walnuts -- chopped
1/2 cup Raisins -OR- currants (opt)
Recipe
Preheat oven to 350~. Butter an 8" square pan.
Over low heat, melt together butter and chocolate; set aside.
In a medium bowl, using a wire whisk, beat eggs until foamy.
Beat in sugar, salt and vanilla.
Stir in melted chocolate mix.
In a small bowl, combine flour and spices.
Gradually stir dry ingredients into chocolate mixture, blending well.
Thoroughly fold in zucchini, walnuts and raisins.
Spread batter evenly in pan.
Bake 20-25 minutes or until tested done.
Cool completely. dust with powdered sugar and cut into squares.
YIELD: 16 Brownies
