Cake
1 1/2 cups brown sugar
1 cup vegetable shortening
4 eggs
1 2/3 cups King Arthur Unbleached All-Purpose Flour
1 1/4 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup natural cocoa powder
1/4 cup black cocoa powder
1 cup milk
Cream Filling
1/4 cup (1/2 stick) butter
1/4 cup vegetable shortening
2 cups glazing sugar or confectioners' sugar
2 teaspoons vanilla extract
2 to 3 tablespoons milk or cream
1 cup Marshmallow Fluff(r) or 1 cup melted marshmallows
Chocolate Glaze
1 cup (6 ounces) dark chocolate pieces
1/4 cup (1/2 stick) butter or margarine
1/2 cup yogurt or sour cream
2 1/2 cups glazing sugar or confectioners' sugar
Recipe
Cake: Beat together the sugar and butter, then add eggs, one at a time, beating until fluffy after each addition. Whisk together the dry ingredients, and add them to the sugar and egg mixture alternately with the milk, beating well after each addition. Lightly grease and flour two 9-inch round pans, and spoon batter into the pans. Bake the cake in a preheated 350°F oven for 25 to 30 minutes, or until it tests done. Let the cakes cool in the pan for 10 minutes, then turn them onto a rack to cool completely.
Filling: Beat together the butter, shortening, sugar and vanilla till fluffy. Add milk one tablespoon at a time, adding just enough so the filling is spreadable. Mix in the marshmallow. Spread filling atop one of the cake layers.
Glaze: Melt together the chocolate and butter, stir in the yogurt or sour cream, then add the sugar and beat until smooth and glossy. Spread the frosting on the cake immediately; it thickens quickly.
