Carrot: Allen House Famous Carrot Cake

- 2 cups flour
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 1 tsp. salt
- 2 cups sugar
- 1 1/2 cups vegetable oil
- 4 eggs, beaten
- 2 1/12 cups shredded carrots
- 1 cups walnuts, coarsley chopped
- FROSTING:
- 8 oz. cream cheese
- 4 Tblsp. butter, softened
- 1 pound confectioner's sugar
- 1 tsp. vanilla
- zest of one lemon, very finely chopped
- 1/4 cup walnuts, chopped fine
Instructions
- Mix and sift together flour, cinnamon, baking soda and salt.
- In another bowl, mix well the sugar, oil and beaten eggs. Combine the two mixtures.Stir in carrots and nuts.
- Pour into 2 9-inch round cake pans that have been greased and line with parchment paper. (grease top of parchment paper also).
- Bake in 350 degree oven for about 50 minutes or until sides just begin to pull away from the pan. Cool.
- For the frosting: Mix well cream cheese, butter, confectioner's sugar and vanilla. Add lemon zest mix well. Frost cake. Sprinkle finely chopped walnuts on top of cake.
Final Comments
NOTE: Don't let this batter sit on the counter too long after the wet and dry ingredients are mixed. It will prevent the rising effect.
