Apple: Apple-Scotch Snack Cake

Topping:
2/3 C. Quaker Oats (quick or old-fashsioned, uncooked)
6 T. all-purpose flour
4 T. butter, softened
3 T. firmly packed brown sugar
Cake:
2¼ C. all purpose flour
1 C. Quaker Oats (quick or old-fash
ioned, uncooked)
1 T. baking powder
½ tsp. salt
1 C. firmly packed brown sugar
2 large eggs
1¼ C. milk
6 T. butter, melted and cooled
1 tsp. vanilla extract
11/3 C. peeled and finely chopped
apple
11/3 C. butterscotch morsels
1½ tsp. milk
vanilla ice cream (optional)
Recipe
Preheat oven to 350 degrees.
Grease bottom of 9x13-inch baking pan.
For topping: Combine oats, flour, butter and brown sugar in a small bowl. Mix until crumbly and set aside.
For cake: Combine flour, oats, baking powder and salt in a large bowl.
Combine brown sugar and eggs with a wire whisk.
Whisk in 1¼ C. milk, along with melted butter and vanilla extract.
Add this to flour mixture all at once, then add apples.
Stir gently until just combined. Pour into pan.
Sprinkle with 1 C. morsels and crumble topping evenly over morsels.
Bake 40 minutes or until golden brown and a wooden toothpick comes out with a few moist crumbs clinging to it.
