Apple: Cocoa Apple Cake

2 cups - Domino® Granulated Sugar
3 - eggs
1 cup - butter or margarine (2 sticks), softened
1/2 cup - water
2 1/2 cups - all-purpose flour
2 tbsp. - cocoa powder
1 tsp. - baking soda
1 tsp. - ground cinnamon
1 tsp. - ground allspice
1 cup - chopped nuts
1/2 cup - semisweet chocolate pieces (3 oz.)
2 cups - grated raw apples (about 2 large)
1 tbsp. - vanilla extract
---Chocolate Sour Cream Frosting---
1 - (12 oz) bag semi-sweet chocolate chips
3/4 to 1 cup - sour cream
4 to 4 1/2 cups - Domino® Confectioners Sugar
1 tsp. - vanilla extractRecipe
Preheat oven to 325°F. Grease and flour 10-inch tube pan. In large bowl, beat sugar, eggs, butter and water until fluffy. Combine flour, cocoa, soda, cinnamon and allspice; beat into sugar mixture. Stir in nuts, chocolate, apples and vanilla. Spoon into pan. Bake 60 to 70 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes on rack. With long spatula, gently loosen cake from pan and turn out onto serving plate to cool completely. Frost with Chocolate Sour Cream Frosting.
To prepare Frosting:
Using a double boiler, melt chocolate chips over very hot water. Remove from heat and add 1/3 of the confectioners' sugar. Beat until smooth. Add the remaining sugar alternately with the sour cream, beating well after each addition. Add the vanilla. Beat until smooth. Spread generously over top and sides of cake.
