Banana: Banana Cream Cake II

2 ripe bananas, mashed
1/4 cup buttermilk
1 tsp. vanilla extract
1 cup cake flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt optional
1/4 cup plus 2 Tbs. unsalted butter, softened
3/4 cup sugar
1 egg
1/2 cup finely chopped walnuts
4 cups vanilla frozen yogurt
Recipe
Preheat oven to 350°F. Combine mashed bananas, buttermilk and vanilla in a bowl. Combine flour, baking powder, baking soda and salt in another bowl. Set aside. Cream butter and sugar in a mixing bowl until fluffy. Add egg and mix thoroughly. Add half the flour mixture to butter mixture. Add half the banana mixture and mix thoroughly. Add remaining flour mixture and banana mixture and beat until incorporated. Stir in walnuts. Pour batter into a buttered 9 inch baking pan. Bake 35-40 minutes or until tester comes out clean when inserted in center. Remove cake from oven and set on a rack to cool. Serve cake with a scoop of frozen yogurt.
