    Carrot: Bob's Carrot Cake

    List of Ingredients

    CAKE:

    2 cups sugar

    2 cups flour

    2 teaspoons salt

    2 teaspoons baking soda

    1 teaspoon baking powder

    1 teaspoon cinnamon

    1 teaspoon vanilla

    4 eggs

    11/4 cups of vegetable oil

    3 cups grated carrots

    CREAM CHEESE FROSTING:

    2 (3-ounce) packages cream cheese

    1 stick butter or margarine

    1 (16-ounce) package of confectioners powdered sugar

    1 teaspoon vanilla

    Recipe


    For the cake, combine dry ingredients. Add oil, then add eggs, one at a time. Fold in carrots and bake in a 350 degree oven for 35 minutes or until done.

    For the frosting, mix all ingredients until creamy. Spread on the cake.

    Makes 9 to 12 servings.
