    Carrot: Manae's Bundt Carrot Cake

    "Everyone else's carrot cake has a thick cream cheese icing. This one is made in a bundt pan and is finished off with a thin glaze....Delicious!"

    List of Ingredients




    3 c. raw grated carrot
    3 c. all-purpose flour
    2 c. sugar
    1 1/2 c. vegetable oil
    2 t. baking powder
    2 t. baking soda
    1 t. salt
    2 t. cinnamon
    1/2 c. chopped nuts
    4 whole eggs

    Recipe



    Mix all dry ingredients together and sift twice. In separate bowl, beat eggs well, then slowly add oil. While still beating, add egg and oil to dry ingredients until a smooth batter has formed (batter will be thick). Add carrots and nuts last. Do not beat after adding these additions.

    Pour into large bundt pan. Bake at 325 degrees about 1 1/2 hours, or until top springs back.

    Let stand about 15 minutes, then remove from pan. Poke holes in top of cake. Glaze with a medium thin mixture of milk and powdered sugar while still warm. Cool completely and serve.

    (If your bundt pan isn't the large variety, make in smaller pan and use the rest of the batter for a loaf cake or cupcakes.)
