Carrot: Carrot Pineappple Cake

List of Ingredients
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon baking powder
3/4 teaspoon salt
1 2/3 cups sugar
1 cup oil
3 eggs
1 1/2 teaspoons vanilla
2 cups shredded carrots
1 cup coconut
1 cup chopped nuts
1 small can crushed pineapple -- drained
Recipe
Mix dry ingredients. Make a well in the center and add in order: sugar, oil, eggs, and vanilla. Beat by hand until smooth (use a good spoon - it's thick). Stir in remaining ingredients. Pour into greased and floured 13"x9" pan and bake @ 350° for 45 minutes. Will sink in the middle.
Frost with your favorite buttercream or cream cheese frosting. We like a glaze/frosting made of cream cheese and honey.
