Cherry: Cherry Fruit Cake

List of Ingredients
1 1/2 cup Sifted All Purpose Flour
1 1/2 cup Sugar
1/2 cup Corn Syrup
1/2 cup Dark Rum
18 oz (about 5 1/2 cups) Pecan Halves
6 Eggs
2 jars (16 oz. each) Red Maraschino Cherries, drained
1 lb Diced Candied Pineapple
2 pkgs (7 1/2 oz. each) Pitted Dates
1 cup Water
1 tsp Salt
1 tsp Baking Powder
Recipe
Grease two 9x5x3-inch loaf pans; line with aluminum foil, allowing a 2 inch overhang; grease the foil.
Sift flour, baking powder and salt into a large mixing bowl. Add dates, pineapple, maraschino cherries and pecan halves.
Beat eggs in a bowl until thick. Blend in rum. pour over fruit mixture and toss until thoroughly mixed. Turn into prepared loaf pans, pressing mixture with spatula to pack tightly.
Bake at 300°F about 1 3/4 hours or until wooden tooth pick inserted in center of loaves comes out clean. Remove from the oven to a cooling rack and allow to cool 15 minutes before removing loaves from pans. Peel off the foil and while still warm brush loaves with corn syrup. Cool thoroughly before serving or storing.
