Chocolate: NPR Chocolate Cake

3 oz. (3 squares) unsweetened chocolate
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 stick butter (room temperature)
1 1/2 cups sugar
2 eggs (large or ex-large)
2 tablespoons plus 1 1/2 teaspoons white or cider vinegar
1 cup of milk
Recipe
Pre-heat oven to 350° F.
Grease and flour two 9inch cake pans.
Melt chocolate in a double boiler on the stove over medium-low heat. Once melted, set aside to cool a bit before you add it to everything else.
Sift together the flour, baking powder, baking soda, salt and cinnamon. Set aside.
In a large bowl cream the butter. Add sugar and mix well. Add eggs one at a time, beating well after addition. Mix in the vinegar. It'll look curdled and that's okay. Add the melted chocolate and beat only until smooth.
On low speed add the dry ingredients in three additions. Alternate with the milk in two additions (flour - milk - flour - milk - flour). Beat only until smooth after each addition.
Split batter between the two pans. Smooth tops.
Bake for 35-40, or until the tops spring back and the layers begin to pull away from the sides of the pans.
Run a knife along sides to help loosen. Allow to cool on racks for 10 minutes before inverting. Leave each layer right side up to cool on racks.
Whipped Chocolate Icing
This is a good icing to let flow over the layers. But you can chill it down to a thicker - spread able consistency, if you'd like.
6 oz. (6 squares) unsweetened chocolate, chopped
1 stick butter
2 1/4 cups confectioners sugar
2 eggs
3 tablespoons hot water
1/2 teaspoon vanilla extract
dash of salt
Melt chocolate and butter in a double boiler.
In a mixing bowl, beat eggs, water, vanilla and salt. Add confectioners sugar and mix until it's incorporated.
Add the melted chocolate/butter mixture - slowly at low speed. Scrape bowl as needed.
Once it's all mixed together - take this bowl and place it in a larger bowl of ice water. This will help thicken the icing. Cool to your desired consistency, stirring to do so.
Pour (or spread )1/3 of icing over one layer. Place second layer on top and finish icing the cake.
