List of Ingredients
1/2 cup cocoa
1/2 cup water, boiling
2/3 cup shortening
1 3/4 cups sugar
1 tsp. vanilla extract
2 egg
2 1/4 cups flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 1/3 cups buttermilk
BUTTERCREAM FROSTING:
6 tbsp. butter; softened
2 2/3 cups sugar, confectioners
1/2 cup cocoa
1/3 cup milk
1 tsp. vanilla extract
Recipe
Heat oven to 350 F. Grease and flour two 9" layer cake pans; line with baking parchment. In a small bowl, stir together the cocoa and water until smooth, then set aside. In a large mixer bowl, beat the shortening, sugar, and vanilla until light and fluffy. Add eggs; beat well. In a separate bowl, stir together the flour, baking soda and salt; add to the shortening mixture alternately with the buttermilk. Blend in the cocoa mixture; beat well. Pour batter into prepared pans. Bake 35 to 40 minutes or until a toothpick tests clean. Cool ten minutes in the pan, then remove to a wire rack and cool completely.
Frosting: In a small mixer bowl, beat the butter; then add the confectioners' sugar and cocoa alternately with the milk and beat to a spreading consistency (additional milk may be needed). Blend in vanilla.
