    Apple: Cinnamon-Apple Cake

    List of Ingredients

    2 large golden delicious apples, peeled, cored and coarsely chopped
    2/3 cup sugar
    1 teaspoon cinnamon
    1/3 cup plain, lowfat yogurt
    1/3 cup all-purpose flour
    1/2 teaspoon baking soda
    3 tablespoons vegetable oil
    1 egg, beaten
    1 egg white



    Recipe

    1. Preheat oven to 350°F.

    2. Spray one 8-inch cake pan with nonstick cooking spray.

    3. Spray a medium nonstick saute pan with nonstick cooking spray. Saute the apples, tossing occasionally until golden brown, 5 to 7 minutes. Stir in the cinnamon and 1 tablespoon of the sugar. Remove from heat and set aside.

    4. Whisk together the yogurt and remaining sugar in a large bowl until very smooth, about 2 minutes. Combine the flour and baking soda, add it to the yogurt mixture, then add the oil, egg and egg white to this batter, whisking well after each addition. Stir the apple pieces into the batter.

    5. Pour the batter into the prepared pan, spreading it evenly. Set on a baking sheet and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
