Pound: Coconut Pound Cake

½ pound unsalted butter, softened
1 teaspoon vanilla extract
1 teaspoon baking powder
1 cup milk
¼ teaspoon salt
4 eggs
2 cups sugar
1 ½ cups shredded coconut
¼ teaspoon salt
2 ½ cups cake flour
Recipe
1. Preheat oven to 350 F.
2. Grease and flour, or line two loaf pans (approx 8 x 4x 3 inch) with parchment paper. Set aside.
3. In an electric mixer on medium speed, cream the butter and sugar until light. Add vanilla. Add eggs, one at a time, beating well after adding each egg.
4. In a small bowl, combine flour, baking powder, and salt. On low speed, add to the butter mixture alternately with the milk. Start and end with the flour mixture. Mix just until blended. Stir in coconut. Pour batter into prepared pans.
5. Bake 55 to 60 minutes, or until a tester comes out with a fine crumb. Remove cakes from the oven and cool on wire cooling racks for 10 to 15 minutes. Carefully remove the cakes from the pan and continue to cool on wire cooling rack.
