    Cupcakes: Cream Cheese Chocolate Cupcakes

    List of Ingredients

    Topping:

    8 oz. cream cheese
    1 egg
    1/3 c. sugar
    1/8 tsp. salt

    Batter:
    3 c. flour
    2 c. sugar
    1/2 c. cocoa
    2 tsp. baking soda
    1 tsp. salt
    2 eggs
    2 c. water
    1 c. oil
    2 tsp. vanilla
    2 Tbsp. vinegar


    Recipe

    Mix topping ingredients and set aside.

    Put all ingredients for batter in mixing bowl and beat
    for 2 to 3 minutes until blended. For small cupcakes, put in 1 tablespoon batter and top with 1 teaspoon topping, add 5 chocolate chip morsels on top. Bake at 350 degrees for 15 to 18 minutes.

    Makes 80 to 85 cupcakes.

    For large cupcakes, put in 4 tablespoons batter and top
    with 2 teaspoons topping, add 10 morsels. Bake at 350 degrees for 20 to 23 minutes.

    Makes 20 to 24 cupcakes.
