Recipe Introduction
Huntsman Cake, so named because hunters would take it with them for lunch, it was typically eaten with red currants. This version of almond cake is served with raspberries.
List of Ingredients
4 eggs, separated
5-1/2 oz. sugar
3-1/2 oz. ground almonds
2 Tablespoons flour
pinch of salt
3-1/2 oz. raspberries
3 Tablespoons slivered almonds
Recipe
Preheat oven to 350°F.
1. Grease and flour a 7-inch springform pan and line the bottom with a piece of waxed paper.
2. Beat the egg yolks and 2 oz. of the sugar together until it is thick and when the beater is lifted it leaves a ribbon.
3. Fold in the flour and the ground nuts.
4. In clean bowl, with clean beaters, beat two of the egg whites with a pinch of salt until they form soft peaks.
5. Add 2 oz. of the sugar and continue beating until the mixture becomes stiff and glossy.
6. Fold the beaten whites into the yolk mixture, then pour into the prepared pan.
7. Bake for 15-30 minutes. The cake should be well risen and a skewer inserted into the middle of the cake will come out clean.
8. Spoon the raspberries on top of the cake.
9. Beat the remaining egg whites and sugar together as in steps 4 and 5. Spread on top of the fruit.
10. Return the cake to the oven for 6-8 minutes or until the meringue is lightly golden and just set.
