"Although cane syrup (made from sugar cane) is what makes this an authentic Southern sweet, you can substitute a mix of dark corn syrup and molasses. Elsie likes to serve this spice cake with fresh fruit or sweetened cream."

2 1/2 cups all-purpose flour
2 tsp. baking powder
2 tsp. ground allspice
1/2 tsp. baking soda
Dash salt
1 cup sugar
3/4 cup cane syrup or 1/2 cup
dark-colored corn syrup plus
1/4 cup molasses
3/4 cup cooking oil
2 eggs
3/4 cup water
1 recipe Sweetened Whipped
Cream (optional)*
Ground nutmeg (optional)
Recipe
In a medium mixing bowl combine flour, baking powder, allspice, soda, and salt; set aside. In a large bowl beat sugar, cane syrup or corn syrup plus molasses, oil, and eggs on low speed of an electric mixer tin combined. Alternately add flour mixture and water to syrup mixture, beating till combined after each addition. Pour mixture into a greased 13x9x2-inch baking pan.
Bake in a 350[degrees] oven about 45 minutes or till a toothpick inserted near center comes out clean. (Cake may dip slightly in center.) Cool slightly in pan on a wire rack. Serve warm with sweetened whipped cream and sprinkle with nutmeg, if desired.

* Sweetened Whipped Cream:
In a mixing bowl beat 1 cup whipping cream with 2 tablespoons cane syrup or sugar till stiff peaks form.
