    Misc: Golden Chocolate Chip Sour Cream Cake

    List of Ingredients

    1 cup unsalted butter
    1 3/4 cup sugar
    3 eggs
    1/2 cup milk
    1 cup sour cream
    1 tablespoon pure vanilla extract
    1 cup cake flour
    1/2 teaspoon baking soda
    1 tablespoon baking powder
    1/2 teaspoon salt
    2 1/2 cups all purpose flour
    1 cup miniature or regular chocolate chips

    Chocolate Fondant Glaze:

    1/2 cup chocolate chips
    1/4 cup unsalted butter
    2 cups, approximately, confectioners� sugar
    water, as required


    Recipe

    Preheat oven to 350 F.

    Line a baking sheet with parchment paper. Generously spray a 9 by 13 inch rectangular pan with non-stick cooking spray.

    In a mixer, cream the butter and sugar until light and fluffy, about 5-6 minutes. Stir in eggs, and the one cup of cake flour until smooth.

    Add in milk, sour cream, vanilla, baking soda, baking powder, salt, and all-purpose flour and blend to make a smooth batter, scraping the bottom of the mixer every once in awhile, about 2-3 minutes.

    Fold in chocolate chips and spoon batter into pan.

    Place pan on baking sheet.

    Bake until cake springs baked when gently touched, about 45-60 minutes.

    While still warm, glaze with chocolate fondant.

    For the chocolate fondant, melt the chocolate chips in the microwave, about 1-2 minutes on High. Add in the butter and stir to melt, heating a bit more, if necessary. Then, stir this into the confectioners sugar in a larger bowl, whisking to make a smooth glaze. Pour onto the cake.

    Serves about 12-16
