    Apple: Grandma's Apple Cake

    Recipe Introduction

    I clipped this recipe out of a Women's Day magazine and have made it several times. It really has that "homemade" taste!

    List of Ingredients

    2 large eggs
    2 cups sugar
    2/3 cup applesauce
    1/2 cup light olive oil
    2 tsp. vanilla
    1 tsp. baking soda
    1 tsp. ground cinnamon
    1 tsp. salt
    1/2 tsp. ground nutmeg
    3 cups flour
    3 cups coarsley chopped, peeled apples (Granny Smith or Golden Delicious)

    Recipe

    Heat oven to 300 degrees. Coat a 13"x9" baking pan with nonstick cooking spray.
    Put eggs, sugar applesauce, olive oil, vanilla, baking soda, cinnamon, salt and nutmeg in a large bowl. Whisk or beat with a mixer until thoroughly blended. Stir in flour, then apples and nuts. Spread evenly in prepared pan.
    Bake 50 to 60 minutes until a toothpick inserted in center comes out clean. Cool in pan on a wire rack. Make 4 lengthwise and 3 crosswise cuts. Serve warm or at room temperatue.
    To store, cover and refridgerate.

    YIELD: Serves 20
