1 French Vanilla Cake Mix
Grated Rind of 1 Lemon
1/3 Cup Poppyseeds
Juice from 1 Lemon*
Powdered Sugar
* To get more juice more easily from a lemon, let the lemon reach room temperature and roll it on the counter back and forth a few times.
Recipe
Mix cake according to box instructions, less 3 tbsp. water. Add poppyseeds, Lemon rind and 1/2 the lemon juice; stir well. Bake at 350 degrees in a well greased and Lightly floured bundt pan for 38-43 minutes. When inserted toothpick comes out clean. remove from oven. Very gently turn out on plate after cooling for 5 minutes. Pierce cake all over with fork and drizzle with a thin mixture of powdered sugar and the rest of the lemon juice. Cover cake: leave at room temperature a day before eating.
