    Orange: Orange Carrot Cake

    From 1979 Pillsbury Bake Off Classics

    List of Ingredients

    3 cups all purpose flour
    2 cups sugar
    1 cup coconut
    2-1/2 tsp baking soda
    2-1/2 tsp cinnamon
    1 tsp salt
    2 cups (4 med) shredded carrots
    1-1/4 cups cooking oil
    2 tsp vanilla
    1 tsp grated orange peel
    11 oz can mandarin oranges, undrained
    3 eggs
    1 cup raisins, plumped (... recipe doesn't call for raisins but I love them in this cake)

    Frosting:
    1 (8 oz) pkg cream cheese, softened
    2 Tblsp margarine, softened
    1 tsp vanilla
    3 cups powdered sugar
    1/2 to 1 cup chopped nuts, optional

    Recipe

    Heat oven to 350 - Grease (not oil) 13x9 pan -
    In large bowl, blend all cake ingredients well, scraping sides and bottom. Pour into greased pan - Bake at 350 (335 if glass pan) for 35-45 mins or until toothpick inserted in center comes out clean.

    Completely cool.

    Mix frosting ingredients except nuts - beat until smooth. Spread over cooled cake. Sprinkle with nuts.
