    Peach: Peach Cake

    List of Ingredients

    1 1/3 Cups All-Purpose Flour
    1 Tsp. Baking Soda
    1 Tsp. Ground Cinnamon
    1/2 Tsp. Ground Ginger
    1/2 Tsp. Ground Cloves
    2/3 Cup Plain Nonfat Yogurt
    1/3 Cup Honey
    1/4 Cup Vegetable Oil
    1 Egg Beaten
    1 Cup Fresh Peaches
    1 Tbsp. All-Purpose Flour
    Vegetable Cooking Spray
    2 Tsp. Powdered Sugar


    Recipe

    Peel and chop peaches: set aside. Combine flour, soda, cinnamon, ginger, and cloves In a large bowl and stir well. Combine yogurt, honey, oil and egg in a small bowl; stir until smooth. Add yogurt mixture to dry ingredients: stir until smooth. Combine peaches and 1 tablespoon flour, tossing gently to coat. Fold peaches into batter and spoon batter into an 8 square pan that is coated with cooking spray. Bake at 350 for 25 minutes or until toothpick inserted comes out clean. Let cool completely in pan on a wire rack. Sift powdered sugar over cooled cake.
    YIELD: 12 Servings
